A margarita with just the right amount of spice; it tastes like heaven.
It was Super Bowl Sunday and I make drinks for a few friends and family. We decided to have Mexican food catered and the obvious drink of choice was margaritas. My girlfriend (now wife) and sister-in-law enjoy a good amount of spice in their margaritas so wanted to make sure there a little extra kick.
Although it's a pretty straightforward recipe that requires a little pre-work to make the homemade infused tequila and simple syrup.
The Cocktail:
1.5 oz jalapeno infused tequila
0.5 oz jalapeno infused simple syrup
2.0 oz Tres Agave Margarita Mix
1/2 lime
Combine all of the ingredients in a cocktail shaker, add ice. Shake for at least 10 seconds and strain into your favorite glass filled with ice.
You could choose to salt the rim. Before filling the glass with ice. Pour rock salt or tajin onto a plate. Use part of a sliced lime and rub it along the edge of the glass. Place the edge of the glass into the salt/tajin.
The Homemade Stuff
The jalapeño infused tequila and simple syrup were made the morning of in about 20 minutes. They're bout quite simple once you try it a few times.
Homemade Jalapeno Infused Tequila
I start by cutting the end off the fresh jalapeno and then cutting it into quarters length wise. Next, pour your favorite tequila for margaritas into a mason jar and then add the jalapeño quarters and especially the seeds into the tequila. Make sure you allow some time for the spice to take into the tequila, taste regularly for the level of spice you want. Strain out the jalapeño pieces. I use a mason jar for the infusion process because it easy to store and it is easy to pour with a strainer when pouring.
Homemade Jalapeno Infused Simple Syrup
Start with the same process for cutting the jalapeno in the previous paragraph. Next, add 1 cup sugar, 1 cup water, and quartered jalapeno to a small saucepan. Place on the stove over medium heat and stir occasionally until its almost to a boil. All of the sugar should have dissolved by now. Turn down the heat to simmer and allow mixture to simmer for 10 minutes. Turn off the heat and strain into another mason jar and allow to cool.
